Loaded Mashed with Extra Rich
Mashed potatoes mixed with sharp Cheddar cheese, bacon bits, sliced chives and sour cream.

INGREDIENTS

1 ctnPotato Pearls® Extra Rich Mashed Potatoes

0.5 cupChives, dry (or freshly sliced)

1.5 galWater
-
1 tspBlack pepper, ground

2 cupMilk, 2%
-
2 qtSour cream
-
0.5 lbButter, diced
-
2 cupBacon, cooked, chopped

2.5 TbspSeasoning salt
-
4 cupSharp Cheddar cheese, grated
INSTRUCTIONS
- 1. Heat water, milk, butter, seasoning salt, chives and black pepper to a boil, over medium high heat, stirring occasionally.
- 2. Add sour cream to the bowl of a mixer fitted with the whip attachment. Pour water mixture over sour cream, turn mixer on to medium speed.
- 3. Add potatoes in a steady stream while whipping, until potatoes are fully hydrated, about 3 min., scraping down the sides of the bowl once during mixing.
- 4. Add bacon and cheese and whip until cheese is melted, about 1 min. Transfer to steamtable and serve.
