Scallion Potato Pancakes with Cho Ganjang Aioli & Slaw
Korean-style scallion pancakes made with Potato Pearls® Mashed Potatoes, sliced scallions and garlic, served with cho ganjang aioli.

1 CupAll purpose flour

2 TbspCornstarch

2 tspSalt

2 tspFish sauce
-
1 EaEgg
-
1 CupSparkling water
-
2 tspGarlic, minced

1 BunchScallions, thinly sliced

2 TbspSoy Sauce
-
2 TbspRice wine
-
2 TbspRice vinegar
-
1 TbspSesame oil
-
1 TbspSesame seeds, toasted

2 CupsMayonnaise
-
1 CupCarrots, shredded
-
0.75 CupsScallions, thinly sliced

2 TbspSweet chili sauce

1 TbspLime juice
INSTRUCTIONS
- 1. Prepare the Potato Pearls® Mashed Creations™ Mashed Potatoes according to package directions and allow to cool.
- 2. In a medium bowl, combine the flour, cornstarch and salt. In a separate bowl, whisk together the fish sauce, egg, sparkling water and cooled mashed potatoes.
- 3. Add the wet ingredients to the dry ingredients and gently mix just until combined. Do not overmix.
- 4. Heat a lightly oiled skillet or flat top over medium heat. Add a portion of the garlic and scallions and sauté briefly until fragrant.
- 5. Pour 1/6 of the pancake batter over the garlic and scallions. Cook for approximately 3 minutes per side, or until golden brown and crisp. Repeat with the remaining batter.
- 6. To prepare the aioli, combine the soy sauce, rice wine, rice vinegar, sesame oil, sesame seeds and mayonnaise. Mix until evenly incorporated.
- 7. To prepare the slaw, combine the carrots, scallions, sweet chili sauce and lime juice. Toss until evenly coated.
- 8. To serve, drizzle the warm pancakes with the aioli and top with the carrot-scallion slaw.
