Celery Root & Potato Chowder
Creamy celery root and potato chowder garnished with minced celery and sage.

1 tspCelery seed

0.5 cupOlive oil

1 tspThyme, dry

0.5 cupButter
-
0.25 cupKosher salt

8 cupsOnions, chopped

1 tspWhite pepper

0.333 cupGarlic, minced

2 galChicken or Vegetable stock

5 lbsCelery root, peeled, diced large
INSTRUCTIONS
- 1. Melt butter and oil over medium heat. Add onion and garlic and cook, stirring occasionally until onions are translucent, about 5 min.
- 2. Stir in celery root, celery seed, thyme, salt, white pepper and stock. Bring to a boil, lower heat to simmer and cook, stirring occasionally, until celery root is very tender, about 25 min. Remove from heat. Puree mixture using an immersion blender until smooth.
- 3. Whisk in potatoes until smooth. Set for 10 min. Serve or hold hot.
