Celery Root & Potato Chowder

Creamy celery root and potato chowder garnished with minced celery and sage.

Yield: 88 servings, 1/2-cup each

INSTRUCTIONS

  • 1. Melt butter and oil over medium heat. Add onion and garlic and cook, stirring occasionally until onions are translucent, about 5 min.
  • 2. Stir in celery root, celery seed, thyme, salt, white pepper and stock. Bring to a boil, lower heat to simmer and cook, stirring occasionally, until celery root is very tender, about 25 min. Remove from heat. Puree mixture using an immersion blender until smooth.
  • 3. Whisk in potatoes until smooth. Set for 10 min. Serve or hold hot.
