- 1. Pour 1 gallon (3.8L) of boiling water (212°F) into 6" deep half-size steamtable pan. 2. Add all potatoes while stirring (For machine mix prep, mix on low using whip attachment). 3. Let stand for 1 minute, stir well and serve (For machine mix prep, mix on high for 2 minutes). Tip: Mix by hand or prepare in a mixer.

- Pour 2 gallons boiling water (212°F) in mixing bowl.

- HAND MIX: Add all potatoes while stirring. Let stand for 1 minute, stir well and serve.

MACHINE MIX: Using whip attachment, mix on low and slowly add all potatoes. Whip on high until fluffy for 2 minutes, hold until ready to serve.Tip: Add more boiling water to make potatoes thinner or more potatoes to make thicker.
