Mini Sopes with Beans

A fun, handheld twist on classic tacos, these Walking Mini Sopas layered with Smart Servings Vegetarian Refried Beans, seasoned taco meat, fresh salsa and crisp shredded lettuce.

INSTRUCTIONS

  • 1. Prepare Santiago® Smart Servings™ Vegetarian Refried Beans - Low Sodium according to the package directions and keep hot until ready to serve.
  • 2. Fry the sopes for 1 minute until lightly crisp, then keep warm. Alternatively, heat the sopes in a convection oven for 5 minutes and hold warm.
  • 3. Preheat conventional oven to 350F. Heat the taco beef filling until internal temperature is 160F.
  • 4. To assemble, spread 1 tablespoon of refried beans into the bottom of each sope. Top with 2 tablespoons of taco beef filling, followed by 1 tablespoon of salsa or pico de gallo. Finish with shredded lettuce and serve immediately.
