Hashbrown Breakfast Bites

0.125 TspGround Black Pepper

2 CupsShredded Mexican-Style Four-Cheese Blend

0.25 CupChopped Red Bell Pepper

0.25 TspCrushed Red Pepper

6 SlicesCrisp-Cooked Bacon, Chopped

GarnishFresh Chives, Chopped

6 Large EggsLightly Beaten
INSTRUCTIONS
- 1. Preheat oven to 425 degrees. Grease 12 muffin cups with cooking spray.
- 2. Stir together hashbrowns, melted butter, salt, and black pepper. Press ¼ cup of the mixture into bottom and sides of each muffin cup.
- 3. Bake 18-20 minutes, until lightly browned.
- 4. Meanwhile, stir together cheese, eggs, bell pepper, and crushed red pepper in a bowl.
- 5. Remove muffin tins from oven. Reduce oven temperature to 400 degrees.
- 6. Top each muffin with chopped bacon and the egg mixture. Bake 13-15 minutes. Garnish with Chives.
