Rustic Redskin Mashed Shepard’s Pie

A hearty twist on a comfort-food classic featuring savory ground beef, caramelized onion, thyme and rich beef gravy topped with Redskin mashed potatoes and baked until golden brown.

Yield:

INSTRUCTIONS

  • 1. Preheat the oven to 375°F.
  • 2. In a 12" cast-iron skillet, brown the ground beef over medium heat. Drain the excess fat, then add the thyme and cook for an additional 2 minutes. Remove the beef from the pan and set aside.
  • 3. n the same skillet, add the vegetable oil and onions. Cook over low heat, stirring occasionally, for 25–30 minutes, until softened. Stir in the butter and flour, and continue cooking over low heat for 4–5 minutes.
  • 4. Add the salt, tomato paste, beef stock, and Worcestershire sauce, stirring until fully combined. Return the cooked ground beef to the skillet and cook for another 4–5 minutes.
  • 5. Evenly pipe or spread the potatoes over the beef mixture. Cover and bake for 20 minutes. Remove the cover and continue baking for 10–15 minutes, or until the potatoes are golden brown. Let rest for 10 minutes before serving.
