INSTRUCTIONS

  • 1. Prepare the Potato Pearls® Mashed Creations™ Mashed Potatoes according to package directions and allow to cool completely.
  • 2. In a large mixing bowl, combine the cooled mashed potatoes, eggs and salt. Gradually add the flour, mixing until a soft, non-sticky dough forms.
  • 3. Transfer the dough to a lightly floured surface. Divide into sections and roll each into a rope approximately ¾-inch thick. Cut into 1-inch pieces.
  • 4. Bring a large pot of salted water to a boil. Add the dumplings and gently stir to prevent sticking. Cook for 2–3 minutes, or until the dumplings float to the surface. Remove and transfer to a parchment-lined sheet pan.
  • 5. o prepare the panko gremolata, melt 1 tablespoon butter in a sauté pan over medium-low heat. Add the garlic and cook until softened, about 3–4 minutes. Add the panko and cook, stirring frequently, until golden brown. Remove from heat and stir in the parsley and lemon zest.
  • 6. To prepare the herb butter, combine the softened butter, thyme and rosemary and mix until evenly incorporated.
  • 7. To serve, toss the warm dumplings with the herb butter and finish with the panko gremolata.
