Patatas Bravas Waffle
A savory Redskin mashed potato waffle topped with smoky chorizo, spicy Salsa Brava and creamy garlic aioli. Finished with fresh scallions for a bold take on classic patatas bravas.

2 CupsPotato Pearls EXCEL Redskin Mashed Potatoes, prepared, cooled

2 eachEggs, lightly beaten

1 TspSmoked paprika (for Waffle)

0.25 CupsExtra virgin olive oil

2 eachGarlic cloves, roughly chopped

1 TbspTomato paste

2 TspSmoked paprika (for Salsa Brava)

1 TbspCorn starch

1 CupVegetable Stock

2 TspRed wine vinegar

1 CupMayonnaise

2 TspGarlic, minced (for Aioli)

0.5 TspLemon juice

0.5 CupsChorizo crumbles, cooked

2 TbsoScallions, sliced
INSTRUCTIONS
- 1. To prepare waffle batter, mix the first four ingredients until thoroughly incorporated. Set aside.
- 2. Begin the Salsa Brava by heating a saucepan over medium-low heat. Add the olive oil and garlic, cooking until the garlic is golden and fragrant, stirring frequently.
- 3. Stir in the tomato paste and cook for 1–2 minutes, continuing to stir. Add the paprika, crushed red pepper, and cornstarch, whisking to combine.
- 4. Gradually pour in the vegetable stock, whisking until the mixture is mostly smooth, then stir in the vinegar.
- 5. Transfer the sauce to a blender and purée until completely smooth.
- 6. For the aioli, mix all ingredients together until well combined.
- 7. TTo assemble the dish, pour the waffle batter into a waffle maker and cook until golden brown. Top with chorizo, drizzle with Salsa Brava and aioli, and finish with a garnish of sliced scallions.
