Gruyere Potato Dumplings with Bacon, Herbs and Sour Cream

Tender potato dumplings filled with creamy mashed potatoes and Gruyère, then pan-seared until golden. Crispy bacon, fresh dill and parsley, and a dollop of sour cream finish this savory, Eastern European-inspired dish.

Yield: 20-24 Dumplings

INSTRUCTIONS

  • 1. Prepare the Potato Pearls® Mashed Creations™ Mashed Potatoes according to package directions and allow to cool completely. Stir in the shredded Gruyère until evenly incorporated.
  • 2. To prepare the dough, combine the flour and salt in a medium bowl. Add the butter and work into the flour until the mixture is crumbly.
  • 3. Add the egg and sour cream and mix gently to combine. Gradually add the water, mixing until a soft dough forms. Add additional water as needed.
  • 4. Knead the dough for 2–3 minutes. Return to the bowl, cover and allow to rest for 20 minutes.
  • 5. Transfer the dough to a lightly floured surface and roll to approximately ?-inch thick. Cover with a clean kitchen towel and allow to rest for an additional 20 minutes.
  • 6. Cut the dough into circles. Place 1–2 tablespoons of the potato-Gruyère filling in the center of each. Fold the dough over the filling and firmly seal the edges with your fingers or a fork. Transfer to a parchment-lined sheet pan.
  • 7. Bring a large pot of salted water to a boil. Cook the dumplings in batches for 2–3 minutes. Remove and transfer to a sheet pan.
  • 8. Heat butter or olive oil in a sauté pan over medium heat. Add the cooked dumplings and cook for 3–4 minutes, turning as needed, until heated through and golden brown.
  • 9. To serve, top with crispy bacon, fresh dill and parsley, and sour cream.Search Keywords
