Zucchini Garlic Mashed

Rich garlic mashed potatoes are blended with zucchini and Parmesan cheese for a perfect complement to a vegetarian meal.

INSTRUCTIONS

  • 1. Prepare mashed potatoes according to base prep directions. Hold hot.
  • 2. Heat olive oil medium heat, add zucchini and cook, stirring frequently, until zucchini has given up most of its moisture and begins to turn light brown, about 8 min.
  • 3. Add roasted garlic, salt, and milk to zucchini, bring to a simmer, about 3 min.
  • 4. Stir zucchini mixture and cheese into potatoes. Serve or hold hot.
