Potato Tacos

A fun, easy twist on an authentic dish. Potatoes and beans in crispy taco shells topped with cabbage slaw and spicy salsa verde.

Yield: 50, tacos

INSTRUCTIONS

  • 1. Prepare potatoes and beans according to directions.
  • 2. In a large bowl combine cabbage and salsa, set aside.
  • 3. Fill taco shell with ¼ cup of potatoes, topped with 1 tablespoon black beans, ¼ cup cabbage mixture and 2 tablespoons of salsa verde. Serve immediately.
