Plant Protein Burrito Bowl

Yield: 18 bowls

INSTRUCTIONS

  • 1. Prepare crumbles according to package directions.
  • 2. Add 1/2 cup refried beans, 1/4 cup elote corn salsa, 1/4 cup crumbles, 1 cup lettuce, 1/2 cup rice to a bowl.
  • 3. Sprinkle 2 Tbsp Cojita cheese and 2 Tbsp Pico de Gallo on top. Place 1/4 cup Pico de Gallo in a ramekin on the side.
  • 4. Place 3 slices of avocado on top of bowl and drizzle 2 Tbsp of sour cream over all ingredients.
  • 5. Repeat steps 1-4.
