Plant Protein “Beef” and Bean Quesadilla

Yield: 18 Quesadillas

INSTRUCTIONS

  • 1. Prepare Crumbles according to package directions.
  • 2. Spread ¼ cup beans evenly over ½ of the tortilla.
  • 3. Sprinkle a ¼ cup Crumbles over beans, 2 Tbsp Cotija cheese over Crumbles.
  • 4. Fold the tortilla in half.
  • 5. Cook on a preheated 350°F griddle for 3 minutes. Flip and cook for an additional 3 minutes.
  • 6. Remove from griddle and cut into 4 pieces.
  • 7. Serve with ¼ cup of sour cream and ¼ cup of salsa.
  • 8. Repeat steps 2 through 7.
