Holiday Maple-Vanilla Sweet Potatoes

Mix cinnamon, maple syrup, and vanilla into mashed sweet potatoes for a sweet treat!

Yield: About 21, 4.25 oz servings

INSTRUCTIONS

  • 1. Preheat oven to 350°F.
  • 2. Pour 1.9L (2 quarts) of hot water (170-190°F) into third-size steamtable pan. Add potatoes and cinnamon, maple syrup, and vanilla, stir until fully combined. Tip: For creamier texture increase the amount of hot water. Mix by hand or prepare in a mixer.
  • 3. Serve 1/2 cup/4.25 oz (#8 disher).
