Caprese Lentil Penne

Plant protein-packed Lentil Penne in a creamy alfredo sauce, with cherry tomatoes and basil for a twist on a classic caprese dish.

Yield: 22, 8-oz servings

INSTRUCTIONS

  • 1. Prepare penne according to directions. Toss with vegetable oil and hold.
  • 2. For Alfredo Sauce: Heat 1 Tbsp vegetable oil over medium heat. Add garlic and cook for 2 mins. Add heavy cream, simmer for 10 mins. Add parmesan and mozzarella cheese. Stir. Season with salt, black pepper and nutmeg. Hold warm at 140°F.
  • 3. Combine warm penne with alfredo sauce, chopped basil and cherry tomatoes. Hold at 145° F for service.
