6 tspVegetable oil (divided)
0.25 cupGarlic, peeled, minced
3 qtsHeavy cream
2 cupsParmesan cheese block, grated
2 cupsMozzarella, shredded (divided)
0.25 tspNutmeg, ground
1 TbspKosher salt
1 tspBlack pepper, ground
2 cupsBasil, stems removed, rough chopped
4 cupsCherry tomatoes, halved
- 1. Prepare penne according to directions. Toss with vegetable oil and hold.
- 2. For Alfredo Sauce: Heat 1 Tbsp vegetable oil over medium heat. Add garlic and cook for 2 mins. Add heavy cream, simmer for 10 mins. Add parmesan and mozzarella cheese. Stir. Season with salt, black pepper and nutmeg. Hold warm at 140°F.
- 3. Combine warm penne with alfredo sauce, chopped basil and cherry tomatoes. Hold at 145° F for service.
